MAIN DISHES - Chicken and Gravy


2 cups cooked chicken
3 cups any leftover vegetables that you enjoy
1 1/2 sticks butter
3/4 cup flour
6 cups chicken stock or broth
salt
pepper

In a stockpot, melt butter.  Add flour and whisk.  Let simmer to cook the flour on LOW for a minute or two.  Whisk into that mixture chicken stock or broth.  You will get a richer flavor with the stock, but broth works fine.  Stir occasionally as the mixture will thicken as it cooks.  Add your cooked chicken and vegetables.  Salt and pepper to taste.  Serve over rice or noodles.
