BREADS AND COFFEE CAKES - Zucchini Loaf


3 eggs
2 cups sugar
1 cup vegetable oil
2 cups grated, peeled raw zucchini
3 tsp. vanilla
3 cups flour
a tsp. salt
1 tsp. baking soda
1/4 tsp. baking powder
3 tsp. cinnamon
1 cup walnuts

Beat eggs until light & foamy; add next 4 ingredients.  Sift in dry ingredients.  Add nuts.  Pour into 2 greased loaf pans 9 x 5 or 4 small ones.  Bake at 350 for 1 hour.
