1 cup shortening
1 cup brown sugar
1 cup white sugar
2 eggs
2 cups flour
2 tsp. soda
1 tsp. baking powder
1/2 tsp. salt
1 tsp. vanilla
2 cups coconut
2 cups quick oatmeal
After mixing all ingredients, chill. Then roll into small balls & flatten. Brush with egg white. Bake 350° 10 to 13 minutes. Approx 4 dozen.
